Grant van Gameren takes on traditional Mexican cuisine with Quetzal
Chef and restaurateur Grant van Gameren is getting ready to open the seventh addition to his roster of Toronto hot spots. Quetzal will focus on authentic regional Mexican cuisine – from mole and mescal, to barbacoa and grilled fish, to ceviches and salsas and more. The menu draws inspiration from regional specialties of Oaxaca, Yucatan and Baja California, using both traditional techniques and hard-to-find ingredients native to Mexico paired with local Canadian produce. The entire menu will be cooked over a stunning 28 foot-long open fire that runs the space of the entire restaurant. Van Gameren has partnered with restaurateur Owen Walker as well as chefs Kate Chomysyn and Julio Guajardo for this launch.
